In a Town Where the Food Is the Event
Gonzales has been the Jambalaya Capital of the World since the governor said so at the first Jambalaya Festival in 1968, and it isn’t an idle title. Around here the cooking is frequently the main event and everything else arranges itself around the pot.

Planning Around the Cooking
Three things worth deciding before you book:
- Keep the inflatable well clear of the cooking. Obvious, routinely ignored. Open flame, hot pots and children at a run don’t belong in the same part of the yard. Put them at opposite ends and the whole event relaxes.
- Shade the cooks, not just the guests. Whoever is on the pot is standing over heat for hours. A tent over the cooking area is worth more than one over the tables.
- Seat more people than you think. When the food is the draw, people sit down and stay. Gonzales parties run longer than average and seating gets used properly rather than being scenery.

- Tables and chairs, generously counted.
- Tents, plural more often than not: one for eating, one over the cooking.
- Linens if it’s a milestone rather than a Saturday.
Ascension Parish and Newer Neighborhoods
Gonzales has grown quickly and much of the newer housing has generous, level back yards — easy to work in, plenty of room for a full setup. Older properties closer to the Airline Highway corridor tend to have more mature trees, where overhead clearance matters more than ground space.
